No Bake Cucumber Cake

There are some delicacies from my native which are so authentic and if we cook in the modern way it doesn't bring that original flavor. I am posting one such dish . This is called "Kendatadye" in the local language called Tulu which is common language in Mangalore. literal meaning of the word is like this Kenda means Charcol and Adye means "dish". Its basically a dish cooked in Earth Oven.


Kendatadye/Cucumber Cake Cooked in Earth Oven

Preparation Time: 10 min
Cooking Time: 1 hr 30 min
Makes: 20 pieces

Ingredients

1 cup white rice soaked in water
1 big cucumber cut into chunks
1 cup coconut grated
2 cups grated jaggery
salt per taste
3 medium onions chopped
1/4 cup ghee



Method

Cut the cucumber into chunks into pieces and soak the rice in water for about 4 to 5 hrs.

Grind together the jaggery, coconut grated, rice and cucumber adding water. Put it in a vessel and keep it in a warm place for about two hours to set the batter.

There is special aluminum vessel for this particular dish. Grease properly the dish. The ghee should be floating lightly over the batter. Pour in the batter.

Keep the vessel covered in the earth oven and keep the top covered with charcoal as showed above.

Cut into small pieces and Noy it when hot.
