Cream of Spinach Soup..

Winter has already stepped into my city and all warm clothes are coming out of wardrobe and I don't feel like getting up in the morning. This is when M and I will have fights to get up and switch of geaser. Yes that is our first work in the morning.

Yesterday when we were coming back from our usual evening walk both our eyes set on fresh and tender palak. Both our minds started running so fast thinking what we can prepare for dinner and M came up with idea of making soup. So here is Winter Warmer.



Cream of Spinach Soup

Preparation Time : 10 min
Cooking Time :20 min
Serves 2-4

Ingredients

1 big bunch of tender Palak/Spinach
4 medium tomatoes
4-5 garlic cloves
1 tsp red chilli flakes
salt to taste
2 cups of milk/cream
Corriander leaves for garnishing

Method

Clean the palak leaves thoughly and take only the tender leaves discarding the stem. Then take a microwave safe bowl and put liltle water and put all the leaves and blanch it for 6 min in HIGH.

Take the tomatoes and make small holes with the help of a fork and blanch it for 6 min in Microwave in HIGH.

Let the ingredients cool completely and put the blanched palak, tomatoes, red chilli flakes and garlic in the blender and blend it into a fine batter consistency by adding the same water which we used for blanching.

Once the blending is over pour the entire contents into a non stick pan and cook it medium flame and milk/cream and salt and let it simmer for about 10 min.

Serve hot and Njoy.
