ALOO METHI

Aloo/potato/Aloogadde.. various name called in different regions to the same tasty veggie. This veggie is loved in almost by everybody and can substitiute anything. My pantry is not without Aloo anymore after my marriage. I use this for the usual curry, sabji, fried items.. and the list goes on. If your curry becomes salty add a piece of potato it is a remedy. if you have to thicken the consistency of a curry you can put this. Here is my version of Aloo methi.. and this is my contibution for the Ode to Potato hosted by sia of Monsoonspice and Potato feast hosted by Culinary Bazaar

Ingredients

  • 3 medium boiled/pressure cooked potatoes
  • 2 bunches of methi leaves
  • 2 medium onion
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • salt to taste
  • 1/2 tsp sugar
  • 2 tsp ghee
  • 1 tsp oil
  • 2 garlic cloves
  • 1 tsp jeera/cumin seeds
  • 1 tsp lime juice/amchoor/dry mango powder
  • corriander leaves for garnishing
  • 1/2 tsp chilli powder

Mehod

  • Pressure cook the potato for two whistle in a pressure cooker and keep it aside. Take out just the tender leaves of methi and wash it properly.
  • Take a pan heat 1 tsp of oil and add the finely chopped methi leaves and fry until the bitterness of the methi is gone, keep the fried methi leaves in a saparate bowl.

  • Take the same pan add the jeera and garlic wait until jeera crackels then add the onion and fry until transparent add the methi leaves and then add turmeric powder+chilli powder+garam masala+salt+sugar+amchoor powder and give it a fry until it is mixed with the onion.

  • Add the cut boiled potato into the pan and mix it properly and keep stirring until it is hot. garnish it with the corriander leaves.

  • Serve hot with chapati/pulka/paratha/rice
